
These pancakes are our Saturday morning ritual! Lowana loves cooking these with me. They are healthy, filling and super delicious!
- 2 Large ripe bananas
- 2 1/4 cups rolled oats
- 1 cup of unsweetened almond milk
- 1 tablespoon of honey or maple syrup
- 1 large egg
- 1 teaspoon of sea salt
- 1 tablespoon of ground cinnamon
- 1 1/2 teaspoons of baking powder
- 1 teaspoon of coconut oil for cooking
- Place all ingredients in the blender and blitz on high until the oats become fine.
- Heat coconut oil in the fry pan on low
- pour 1/4 cup of pancake mixture into the pan and cook 2 -3 minutes on both sides
We serve our pancakes with mixed berries and a small amount of pure maple syrup!
