Date And Coconut Biscuits

You can make these delicious biscuits in the camp oven or Weber. I chose to make them in the camp oven over the fire. If you are making these in the Weber aim to get your temperature at 170 degrees Celsius .

  • 20 dates
  • 2 tablespoons of coconut oil
  • 1 cup of rolled oats
  • 1 egg
  • 1/3 cup of honey
  • 3 tablespoons of natural peanut butter
  • 1 cup of whole meal self raising flour
  • 1/4 cup desiccated coconut
  • 1 Dice pitted dates or add them to your blender and mix on high
  • 2 In a mixing bowl add the remaining ingredients plus the dates and mix well
  • 3 Line your tray with baking paper and roll biscuits to a desired thickness then flatten.

If cooking these biscuits in the camp oven make sure you have your trivet lined with baking paper. Not all of the biscuits will fit in your oven at once so you will have to do it in batches. Place the oven next to your prepared fire then carefully put the coals around it and also on top of the lid. They should take 20 minutes to cook.
