
This tart is great for dinner, lunch or a snack! Its healthy and your kids will love it! It can be cooked in the oven or webber! Its best served hot however having it cold is also refreshing!
- 250g frozen chopped spinach
- 70g light danish feta
- 4 eggs
- 1 cup of greek yoghurt
- 1 teaspoon of grounded cumin
- 1 tablespoon of olive oil
- 1 large sweet potato
- 1 teaspoon of dried chilli
- 1 small brown onion
- Preheat oven or webber to 180
- Beat all 4 eggs in a large mixing bowl
- Add the yoghurt, cumin, olive oil and dried chilli
- Dice the brown onion then add it to the mixing bowl
- Dice the sweet potato and feta into small cubes then add to the mixing bowl
- Mix all ingredients well
- Pour the ingredients into a greased baking dish
- Bake in the oven or on the webber for 45 minutes or until golden brown.
