Banana Pancake Stack

These pancakes are our Saturday morning ritual! Lowana loves cooking these with me. They are healthy, filling and super delicious!

  • 2 Large ripe bananas
  • 2 1/4 cups rolled oats
  • 1 cup of unsweetened almond milk
  • 1 tablespoon of honey or maple syrup
  • 1 large egg
  • 1 teaspoon of sea salt
  • 1 tablespoon of ground cinnamon
  • 1 1/2 teaspoons of baking powder
  • 1 teaspoon of coconut oil for cooking
  1. Place all ingredients in the blender and blitz on high until the oats become fine.
  2. Heat coconut oil in the fry pan on low
  3. pour 1/4 cup of pancake mixture into the pan and cook 2 -3 minutes on both sides

We serve our pancakes with mixed berries and a small amount of pure maple syrup!
